You can sue the company and have the court require them to produce whatever evidence they have to support their position, including any videotapes. I'm assuming that if they do videotape their towing, it's for the purpose of disproving any claims that towed vehicles have been damaged by them. I'm sure they don't want to have to produce the videos in every instance but that doesn't mean it's a legitimate reason or policy. Also, generally it's not the responsibility of determining whether someone is parked illegally. Towing companies are usually called by the police or owner of private property. It might be worth your while to check with one or the other or both of these two to see what the claimed violation was rather than the towing company.
