I want to know if I can interview a criminal, document my experience, and retain all profits as long as I have no contract with the criminal?

Yeah, you can print your interview with whomever. The trouble is that a) convicts tend to portray themselves as innocent, misunderstood, and/or victims, and b) the market for such types of first person accounts isn't there. The books that sell are of the why-(defendant's name)-is-guilty variety. Look at Amber Frey's book sales vs. those of Johnnie Cochran.
