video or audio recording
I run a prenatal education program for a hospital. I would like to video the instructors teaching for the purpose of creating an outline for the class. Do I need to get written consent from the students attending the class to do so?

No, not the students, but I would think that you would want to get the instructors' permission for this particular exercise unless, of course, they're all employees of the hospital.
As to the students, I also would think, however, that you would want to explain your proposal to them beforehand and give any who want the option of opting out of your video-taping, the opportunity to do so.
