Garnishments

how do they determine how much is taken out on a garnishment and can you choose how much comes out of your check?

It's set by statute: unless it's for taxes or child/spousal support or maybe some other special types of debts, it's 25% of the disposable (after tax) paycheck, or the amount in excess of 30 times the federal minimum (hourly) wage per week, whichever is less. You can always agree to send the creditor more and pay the judgment faster; paying less is not an option.
