If you hit a dog/cat while driving, do you legally have to stop?

No, not that I am aware of. However, if you don't and the owner is later able
to identify you as the one who allegedly hit his animal and kept on going, if
you're later sued that fact could work against whatever defense(s) you might have to offer in the case.
