My current court papers state, "Mother shall have the child on Thanksgiving and her weekend shall extend to include Labor Day." DOES THIS MEAN I HAVE THE CHILD FROM THANKSGIVING TO LABOR DAY?

No, most unlikely (in my opinion). This order (however inartfully worded) would appear to be merely addressing the weekend to which a given Labor Day is most closely
connected, chronologically speaking, and a period, i.e.,weekend thru that Labor Day that
the mother is to have custody of the subject child.
Your misconstruence of this order would effectively give you custody of this child for most of the calendar year which, needless to say, I do not believe is the intent of this order.
