If something happened to me and my child's father signed the birth certificate, can I still put something in writing as to who I want to take care of him?

Yes, of course, assuming you mean someone other than the one who signed the child's birth certificate as the father.

You can state who you would want to have custody of your child, but the child's father would have first claim to being the custodian, since he is listed as the natural father, unless he has been found to be unfit or he has surrendered his parental rights.
