if a mother is not sure who the father is and wants to give the baby up for adoption, then a couple adopts the baby and later on down the road the father is now found. say 5 years later, what rights does he have to reclaim that child?

Very likely, none at all since adoptions are normally sealed and are not normally
unsealed five or so years after finalization to accommodate a putative father's
dilatory claim of paternity. (After all, the subject child would've already had a legal father in his or her life for five or more years in the scenario described and likely would be well enough off without this alleged biological father now "horning" his way into the matter.)
