What are my options to have my girlfriend adopt my children?

I have lived with someone for 5 years and she has been a mother to my children for that time. Now the Bio mother has returned and wants visitation. Can I leagally give any type of rights over my children to my girlfriend?

No, you cannot either transfer your rights (nor your obligations)with respect to your children to your girl friend. She, of course, however, could petition to become an adoptive parent of your children and in the event that the court granted her request to become such a parent, your girl friend would then acquire the same rights and obligations with respect to these children which you currently enjoy which would include her right to have a say in what visitation rights may be granted eventually to the biological mother.
