Can an employee handbook override a benefit offered in a signed offer of employment letter?

My employment offer letter states that "In accordance with the terms of XXXX's current policies and benefits plans, you will be eligible for one hundred precent (100%) company-paid premiums for medical, vision and dental benefits." But, my company is now requiring all employees to pay a large portion of their benefits for the 2010 year.

An employment offer letter doesn't necessarily mean an employment contract

enforceable at law, and, therefore, the answer in this case is very likely,

yes, it can (handbook override).
