Use of testimonial from former employee
We had a client who was very happy with our services. The client gave us a testimonial for use in advertising. Eventually, we hired this client as an employee. That employee now left to go to work for our biggest competitor. Can we still us the original testimonial that she gave us? If not, can we simply mention in our advertising that she used to use our services?

From a legal point of view, the problem is that you are implying that she uses your services, which she now does not.
From a business point of view, those who see your advertising a lot have no doubt noticed that you have the same testimonial sitting there over the years. Even leaving aside legal issues, it might be time for some new testimonials.
