If a minor (13 years old) was caught shoplifting and the store manage, detained them, questioned them about the offense without a parent present and did not read them their mirandam rights, will that charge hold up in court?

The rules you are thinking of apply to the police and other public employees, not to the managers or employees of a private business. I would need more information to know whether the store violated the minor's rights, but I don't see anything in your question that would result in the charges being dismissed.
