Probable Cause
If false statements, and wrong dates are used to obtain probable cause (regardless of if it was a mistake), and a case goes to pre-trial, could this be reason to throw out the whole case?

Yes. Probable cause must be based on reasonably reliable information. Failure to have that can result in evidence suppression that gets the case dismissed. Contact me directly if you'd like further assistance.
