buy-out of spouses interest in community property
My wife needs money to rent her own apartment, so I am paying her for her portion of the home equity and the community property (furniture, electronics, etc). What is the best way to create a legal document indicating that the property has been divided and that we both agree on the amount I will pay my wife? What is the best way to create a paper trail to prove that payment has been made so neither party can dispute payment?

You may want to create a separation contract or agreement under Civil Rule 2A. The challenge is in the details and negotiation to get them clearly stated.
