Can I legally get the door logs to prove infidelity from the gym she claims to be going to at night.

I suppose you could get them by subpoena if you filed for dissolution of marriage, but why would you want to? Infidelity is not a basis for dissolution (the only basis is that the marriage is irretrievably broken) and it does not affect parenting plans, child support, property and debt distribution, spousal maintenance, etc.
