Quit claim deed

Can my husband sign over his interest in our home mortgage to me via a quit claim deed that would relinquish him from any responsibility and make me the sole owner of the home?

Responsibility for the loan and ownership of the property are separate issues. Your husband can sign over his interest in the property with a quitclaim deed, but the mortgage is a separate issue. Removal of your husband's name from the mortgage will require a (agreement by mortgage holder-don't plan on that) or refinancing by you to get his name off of the financing document (mortgage), you and he can't do that by agreement between you (even a court can't do that for you).
