In a divorce you have all the tools of discovery that are available in any other civil action. You can present requests for production and interrogatories. If you think the responses are not complete then you can proceed to other processes. You may need to have an forensic accounting expert assist in tracking the money, you may have to get an investigator to locate hidden assets. This is not a skill set that the average person has, and attorneys will generally hire experts to do this work. One good out of this is that the court will assess the costs of proving the hidden assets against the person who hid them (but you have to give them a chance to disclose them first).
