Your letter addressed to whom it may concern stating that your child is travelling with your permission and including emergency contact information for you and for the child's doctor and the child's health insurance information would be useful to your parents, but isn't required.

Acknoweldgement won't help or hinder either way. You can write this yourself. It is just a letter. If your parents can find it in the event of an emergency that would be useful to rescue personnel. Otherwise, they are going to call you if they need permission to give medical care.
