Quitclaim
I am applying for a legal separation and need to know if I should sign a quitclaim deed on the title to the mobile home I am leaving to my spouse. I am not living there but have in my possession the title to that mobile.

A quitclaim deed is one method by which you can transfer your interest in real property. It is inapplicable to personal property. The manner by which you relinquish an interest in a mobile home is by title transfer. This is done through the Department of Licensing. Counties have different requirements for this transfer - you can call or look on-line for the requirements that are applicable to you. There may be a tax on this transfer, although usually when it happens in the context of a disso/separation, there is not.
If the title is in your possession, and you want to relinqish the mobile home to your spouse, you can sign the title and hand the document over to your spouse.
These rules are different if the title to the mobile home has merged into the deed of ownership of the underlying real property. If that is the case, then yes, a quitclaim is how you transfer your interest in the real property, if you have any. I can't tell from your question.
