What is the legality of a "living document" being used as policy and procedure without having employees sign acknowledgment and understanding?
Also, is it legal for an employer to implement a new policy without posting the policy through any channel (ie. email, job board) only by word of mouth? And then threaten your job if it is not followed, the new policy makes the employee liable legality if things go wrong from what we are told.

It is unlikely that someone is legally liable for many things -- as employers are ultimately also responsible for employee screw-ups (but the law varies wildly on the facts).
You can probably be fired for any reason or no reason at all like the rest of the non-unionized non-contracted workforce. Sorry - good luck.
