If I have been working for a year for a Company for free off the papers and they promised me pay down the road and it has been a year and still no pay can I sue

Sound like a good case, to me. If the failure to page wages is "wilfull" then you may qualify for a 100% penalty and get your attorney fees paid by your employer as well.
