after you sighn all the papers at escrow is there a time limit you can change your mind?

Well, no.
When you sign a contract in Washington, the law presumes that you intend to assent to the terms. There is an exception for contracts where a salesperson comes to your home to sell you something; you have a three day right of recission in that circumstance only.
If the escrow contains terms that are materially different from what you were expecting, you should consider whether you have been taken advantage of by a predatory lender.
If that's the case, you can contact the Department of Financial Institutions, which is a division of the Attorney General's office, and ask for help from them.
