With a pending lawsuit, can a person protect his property by filing a quit claim deed?

Absolutely he can deed his property away, as long as he gets full market value in return.
However, since homestead exemptions are generous, it would be VERY unwise to do that with homestead. There are other smarter ways to deal with this issue.
