I would like to compile a book of stories submitted to me by people about a certain subject. Is it necessary to have them sign paperwork stating that I am allowed to use their stories/pictures in my book? Also, are they entitled to a percentage of any profit that may come from the book?

Yes, it is necessary to obtain proper releases. You should have a look at the "Chicken Soup for the Soul" website, which has some example language and rules for submission of stories. If you have the proper release, the person will not be entitled to any profit from the book.
