I am wondering if my domain name (www.appleNN.com) is infringing on any of Apple's Trademarks and Copyrights?

It depends on how you are using the domain name. If you are using it in a way that takes advantage of someone's trademark- for example, selling computer parts or electronics or putting up ads for computers or electronics- that would be trademark infringement. Adding NN would not change anything. However, if you are selling apples on the website, you are using the term apple for its generic meaning and it would not be trademark infringement.
