Is a vacation rental (cabin) contract valid if not signed by both parties?

Yes, if there is other evidence of the existence of a contract or quasi-contract, then mere absence of a signature will not matter. For example, if you have made payments on the agreement, that can be considered acceptance of it by ratification.
