After I file an appeal in probate ..how many days do I have to complete my filing?

It is not clear from your question what you mean by "completing your filing". You have ten days from filing the Notice of Appeal to designate the record and pay the required deposits; if you do not do so you will get a notice from the clerk's office setting a deadline for you to do so. There will also be a Case Information Statement, that the Court of Appeal will mail to you for completion and filing. Your actual Opening Brief will not be due for at least several months or longer.
