Legal Question in Employment Law in Florida

What should I do if my ex-boss that I worked for is going to the state's attorneys office to false claim that I quit working there on payday and took 4 hours of pay that I didnt finish? Should I contact the IRS for him paying $6 under the table with no taxes & not getting paid for overtime, and working me like a slave for 2 years?

You should probably do nothing until the State files charges. The State may very well decline to file any charges and consider this to be a civil matter. If the State does file charges, then you should certainly hire a criminal defense lawyer. You don't necessarily want to do anything before then because anything you say, to the IRS or anyone else, could be twisted around and potentially used against you. Besides, being paid "under the table" means not only did the employer not withhold the taxes, but that usually means the employee didn't pay the taxes since the employer didn't withhold them. If the employee, in this case you, were paid under the table then that means you could potentially be hit with fines and charges for failing to pay your taxes.
