You start with putting together a list of your losses (I know it will grow as you remember or discovery more) then you file a criminal complaint. Update your list as you remember. To do your list, it helps to organize the list, so start with index cards, putting 1 item or groups of related items on each card, so you can easily re-organize the cards. Then type up the list on a PC, but KEEP your index cards. You can carry index cards in a pocket, so as you remember, write it down immediately, so you do not forget it! Eventually, especially if the prosecutor does not want to prosecute, you will need to sue in civil court. You can get the forms from th ecourt, or online to do it yourself, or hire an attorney. Your problem is proof, as he destroyed all your proof, except testimony from you and friends, unless you purchased on credit cards.
