What happens to the copyright of my published book if my publisher files for chapter 11? Can the publisher sell it to anyone?

The rights are unchanged by the publisher's bankruptcy. If the publisher has rights, those remain assets of the publisher, subject to the order of the Court.

If you own the rights, the publisher's status in bankruptcy doesn't matter.
