If three people own a house together and one of them dies, does his third revert to the other two or does it become part of his estate?

It depends on how the deed is worded. If as "joint tenants", the survivors get it. If as "Tenants in Common" the share becomes part of the estate.

Go to the County Clerk's office, and search for the deed.
