Check Indicating "fINAL PAYMENT" when more is outstanding

I recently received a check from a client which was marked "Payment in Full". The check was for $450.00. The actual amount due was $865.00, but the customer is disputing the increased cost. Can I DELETE the notation on the front of the check, initial it, and cash the check and then seek the additional money owed through normal collection processes?

You should endorse the check "under protest" and make a copy of both the front and back of the check.
