what legal recourse does a person have when their child is trying to get them declared incompentent for fiinancial reasons

You have the right to a competency hearing.
You also have the right to ask that someone else [not your child] be responsible for your finances.
You have the right to consult an experienced attorney to help you arrange your matters, so that you are protected in the event of incompetency.
Basically, you are forewarned, so you have the right to do what any sane person would do: plan ahead.
