How do you overcome an appeal, after your motion to supress the evidence was granted

"Overcome" ? If you mean the prosecutor has appealed the decision, you will have to properly and timely respond to the appeal by filing various briefs and other pleadings in the appellate court. If you don't know how to effectively do so, you'll need to hire counsel. Feel free to contact me if serious about doing so, if the case is in SoCal courts.

I'm not sure what you mean by "overcome". If the Court of Appeal reversed the trial court then your only option is to petition for review in the California Supreme Court. If the Court of Appeal has yet to decide the case then you probably need to file briefs in opposition to the prosecutor. Either way you need a lawyer who can effectively represent your interests in these specialized courts.
