In a peaceful protest, when being pepper sprayed by the police, is ok to pepper spray them back?

Not unless you want to get charged with assault on a peace officer, obstruction of justice, and other charges.

Agreed, you will be charged with resisting arrest as well. Cops are authoritarian,so when you resist you will be treated harshly, taken into custody, maybe even strip searched. You will not be happy.

Not unless you like jail food and lodging, which is what you will get with criminal charges of assaulting a police officer, resisting arrest, etc. There is no such thing as 'self defense' available against police.
