can the police "inventory" the trunk if my car is being impounded because i got pulled over and had a suspended license.

Yes they can inventory the entire car hence it is called an inventory.

They are supposed to inventory it, upon impound, to account for what they have impounded. The purpose is to prevent claims that items you had in the car disappeared, were lost or stolen while it was impounded. I hope you didn't keep any contraband in your trunk.
