If someone is on probation in one state for a crime and then decides to bail and not tell his probation officer and just moves to a new state, what will happen?

They can file a petition with the court to have probation revoked, a warrant issued, and when they're caught, they could face the maximum left on their case.
At best you will have a warrant, be arrested when you least expect it, and be extradited back to the probation state; at worst you will be arrested by the U.S. Marshals and do extra, federal time for interstate flight to avoid prosecution.
An arrest warrant will be issued in the convicting state, which will result in you being arrested and brought in chains to the other state's court to face extradition after arrest on the warrant. That will happen if you come in contact with law enforcement or customs anywhere in the US.
