Legal Question in Criminal Law in California
Can you be prosecuted for repeated price tag switching that happened over 5 years ago if you confess you did it? Please don't ask why about the confession.

I know you're posting this scenario in various places. If no charges were filed within the past 5 years, they probably cannot be.
The statute if limitations is how long the DA has to file charges. On a misdemeanor petty theft, it is one year. Felony theft or second degree burglary? Three years.
My suggestion is to out this behind you mentally, but do nothing about not. There can be some theories that extend the statute of limitations. I doubt they apply on your scenario, but why stir up something that can just fade away?
