Threat With A Weapon
If somone holds a knife towards and and states ''I should stab you right now'' Can you sue them?

Probably a good lawsuit indeed, if the person has money or assets that can be recovered, and assuming you were then in danger of the threatened attack (e.g. not across the street or behind a barrier).

Sure, anybody can sue anybody for anything. Winning and collecting are different. If you can prove it happened, and if the defendant is worth enough to justify spending the money to sue [if he has any assets and income that you could collect if you get a judgment], then you can consider doing so.
