How much time will I have to serve if i have a probation violation, uncompleted anger managment classes and not paying my court fees?

If a judge finds you in violation of probation, you could be sentenced to anything up to the maximum for the offense that got you placed on probation. In a misdemeanor case, that could be a year in jail; for a felony, it could be years in prison.

You may have a defense to the probation violation if you simply could not afford to pay the fees, despite making a good faith effort to get a job and fulfill your obligations. If you just blew off your responsibilities, you will have more trouble.

The judge can also give you a second shot at probation, possibly with some more jail time.

You need a lawyer to help you; if you can't afford one, the judge will appoint the public defender.
