I have 100% legal and physical custody of our son. She only is allowed to see him between 8-5 every other Saturday, due to being admitted to hospital for attempted suicide and diagnosed with multiple personality disorder and schizophrenia. Do I have the right to say no to my son going to his mom's when things are not looking good?

Only if your court order permits you to suspend the visitation.
You have the right and obligation to protect your son and may do that by withholding him. In doing so you may take the risk that you could be held in contempt of court if the court would not agree that you were not reasonable in protecting your son. You may want to get an order for supervised visits only, if you think that she is a danger. You may also want to talked to an experienced family law attorney to give you guidelines.
