I have a friend who's OPT expired in January 2010. She is currently employed, but afraid that she can lose everything if my status discovered and be deported. What are her options, aside from getting married?

None that I can see at the moment, aside from a real and bona fide marriage to a US citizen.
Yes, it seems that you are out-of-status and deportable if apprehended by ICE prior to grant of a marriage-based adjustment of status application.
