How often does a California company have to update their employee manual?

In most cases they don't even legally have to have one. It is good idea, however, to do so annually to adjust for changes in the law that generally go into effect on January 1. If you really want to keep on top of it, it should also be reviewed after July 1, when some urgency legislation often takes effect.
