Is it legal to work a salaried employee eight days in a row and provide only 7 days off in A MONTH?

Maybe, but the bigger question here is whether you are properly classified as an exempt employee. We would need more facts to determine the merits of your case.

Yes. However, only if you are properly classified salaried, meaning a supervisor, professional, and the other categories that differentiate you from hourly jobs. If you think should really be classified as hourly, then you could file a claim with the Labor Commissioner.
