My ex employee has asked me for copies of her pay stubs over a dozen times. I have complied each time, as she has a memory problem. She continues to make these requests every week! What is my legal duty to continue to send her the copies? I have te retreive them from storage, now and then there's the cost to mail them (she always wants 3 month's worth).

I would say, send her a certified return receipt letter telling her just what you said above. If she wants to pay your costs to retrieve and mail, then you'll send them. Make sure to document in your letter all of the times you've sent them to her before and you cannot do so any more. Of course, keep a copy of your letter. If you do retrieve the paystubs, keep a copy for yourself, so you won't have to incur those charges again.
One copy, with a cover letter or other written proof you provided it, is all you have to do. Give her a copy of the proof now, and decline to waste your time further.
