Does an employer have the right to restrict how you sign your email correspondence? i.e.
I always place <>< at the end of my name. I have been told this could offend someone, so I can no longer sign my name that way. Legally, must I comply?

If you want to keep your job you should comply. It is their company, their rules. When you own your own company, you can sign your name anyway you want.

Your claim would be one of religious discrimination, except that your use of the Christian cross is on company documents, not personal ones, so they have a right to have religion neutral business communications.
