Legal Question in Employment Law in California
What would be the legal issue is I did not sign a meal waiver? I will be working 9 hours with no one to cover me for breaks or lunch.

Under most circumstances, an employee must be provided a break in the middle of every 4-5 hour shift and a meal break in the middle of the 8-10 hour day, and can not be denied them, and can not waive them. Failure to provide is a violation. If you can't resolve it yourself, you can file a claim the Labor Commissioner and seek their help. If the company retaliates, feel free to contact me to discuss the lawsuit that would raise.
