Legal Question in Employment Law in California
After I quit my job and filed a wage claim, my ex-boss went through all of my old time cards and changed my 30 minute lunch to 45 minutes. Is this legal?

No. How do you intend to prove that? Do you have anything in writing, copies of the originals, or witnesses that can testify to the truth? If so, you have a claim for 'retaliation' on your wage claim, which is more valuable than the claim itself.
