if i work an 8 hour shift, but work through my lunch break, is my employer legally able to deduct a break period from my day?

Deduct? No. In fact, you are entitled / mandated by law to have a break for every 4-5 hour period, meaning a lunch and two breaks for every 8-10 hour shift. If denied, then you are entitled to pay, penalties and interest for each such denied bread. That can mount up to substantial money.
