"Can you sue her..?"
The common saying about the 'law' is that , 'anybody can sue anybody for anything, but wining is a different question".
Maybe, IF you can prove in court that he was influenced by drugs, or she "exerted undue influence or duress or force" over a mentally incompetent person to force a marriage and to create or change a formal 'Trust'. If he is shown to have been 'competent' at the time, then there is no case. The preacher, and the attorney and notary doing the Trust, would be necessary witnesses as to his competence either way.
Tough job, for you to present credible witnesses and admissible documents proving all the elements necessary. And, your emotional responses and distress are not proof of anything at trial, unless you actually win the proposed lawsuit - then they can be argued as part of your 'damages'.
